Sakkarai Pongal Recipe

Ingredients

  • Rice – 2tbsp​
  • Moong dal – ½ tbsp​
  • Double toned milk – ½ cup ​
  • Chopped cashew nuts – ½ tsp​
  • Chopped almonds – ½ tsp​
  • Cardamom powder – 1/4th tsp​
  • Ghee – 1tsp​
  • Vanilla Ensure Diabetes Care – 3 Scoops

Method

  • Dry roast the moong dal till there is an aroma.​
  • In a pressure cooker add rice and moong dal with 1 cup of water and cook it for 4-5 whistles till they are soft.​
  • Let the steam release naturally and mash using a spoon.​
  • In a thick pan, take ½ tsp ghee, add the almonds, cashew nuts and raisins. Let the nuts be golden brown and the raisins swell up. Keep aside.​
  • Take the remaining ghee in a thick bottomed pan. On a low flame add the mashed dal and rice mix and milk and mix well. Add the cardamom powder and mix again. ​
  • Transfer Pongal to a bowl, cool and add 3 scoops of Ensure Diabetes Care, mix it well and serve.
