Sakkarai Pongal Recipe
Ingredients
- Rice – 2tbsp
- Moong dal – ½ tbsp
- Double toned milk – ½ cup 
- Chopped cashew nuts – ½ tsp
- Chopped almonds – ½ tsp
- Cardamom powder – 1/4th tsp
- Ghee – 1tsp
- Vanilla Ensure Diabetes Care – 3 Scoops
Method
- Dry roast the moong dal till there is an aroma.
- In a pressure cooker add rice and moong dal with 1 cup of water and cook it for 4-5 whistles till they are soft.
- Let the steam release naturally and mash using a spoon.
- In a thick pan, take ½ tsp ghee, add the almonds, cashew nuts and raisins. Let the nuts be golden brown and the raisins swell up. Keep aside.
- Take the remaining ghee in a thick bottomed pan. On a low flame add the mashed dal and rice mix and milk and mix well. Add the cardamom powder and mix again. 
- Transfer Pongal to a bowl, cool and add 3 scoops of Ensure Diabetes Care, mix it well and serve.
